The Apps UI leverages the Polkadot-JS API for data querying. The API communicates with a Cere node to fetch information, which is subsequently displayed on the screen by JavaScript. You can select the node for connection in the upper-left-hand corner of the screen.

Here's an example of querying on-chain data with Cere Explorer on the Cere network. To determine the current existential deposit value, navigate to Developer > Chain state > Constants and execute the query for existential deposit under the balances pallet, as illustrated in the following screenshot. The resulting value is displayed in plancks.
